Ukiah Cellars

2007 Cabernet Sauvignon

Site

The Nelson Family has farmed grapes in a small valley west of the Russian River for generations. Alluvial gravels and ancient marine sediments are ideal for growing Cabernet Sauvignon.

Vinification

Gently destemed whole berries are allowed to cold soak. Fermentation occurs slowly with its own natural yeast creating complexity. Slowly warming the resulting wine enhances the mouthfeel and softens youthful tannins. This wine is produced in a fruit forward and accessible style.
